Ron Dimpflmaier

Ron Dimpflmaier, aka @CptnRon302 is a backyard BBQ and grilling guy who loves preparing delicious meals for his family and friends. His love for food started at a young age while helping his mother and grandmother around the kitchen. That love grew as he got older and has grown into great passion for him. Ron believes that anything can be cooked on the Big Green Egg.

While in high school in Long Island, NY, Ron worked in pizzerias and that love for pizza has never left. He is known for creating some amazing pizza pies on his EGGs and loves to experiment with new toppings and methods. According to him, there are no limits to what can go in or on a pizza! He has lived in Florida for over 30 years, soaking up the sun and enjoying his family and creating mouthwatering dishes.

His first Big Green Egg was a birthday present from his parents after watching him battle with a small bullet smoker. To say he fell in love instantly would be an understatement. He quickly realized that he loved his EGG and the community surrounding it. After his first Eggfest cooking experience, he was even more hooked. He quickly started an Instagram page and a FaceBook group, Big Green Eggers of South Florida. Over the years, the EGGs in Rons yard have multiplied to what most would call a collection or maybe even an obsession. Ron participates in many Eggfests and was the North Florida EGGfest Champion in 2020. As strong as his love for EGG cooking is, it’s only outshined by his love for sharing his EGGsperience and helping others. He teaches BBQ & grilling classes and is a true ambassador to the BGE community. Ron‘s motto is, “Get Out and Grill!”

BBQ Nerds

Matt & Anna Seguin – BBQ Nerds

Matt and Anna are the husband and wife nerds behind BBQ Nerds. They love cooking, science, gadgets, cosplay and technology. They started participating in the Fall of 2019 at the Central Florida Fall EggFest, and really enjoying sharing fun and unique recipes with their Big Green Egg family. The Tres Leches bread pudding has become a staple at our competitions. It’s an easy, low-cost crowd pleaser.

 

Seguin’s Famous Tres Leches Bread Pudding

Bread Pudding

Ingredients

Bread Pudding

  • 1 loaf Puerto Rican bread (or Cuban bread)
  • 5 eggs
  • 2 cups milk
  • ½ cup white sugar
  • 1 can evaporated milk (12-14oz)
  • 1 can sweetened condensed milk (12-14oz)
  • 1 teaspoon vanilla extract
  • ½ teaspoon nutmeg
  • ½ teaspoon cinnamon

Sauce

  • ½ cup salted butter
  • ½ cup white sugar
  • ½ cup brown sugar
  • ½ cup heavy whipping cream
  • 1 teaspoon vanilla bean paste

Instructions

Bread Pudding

  • Cube bread into 1 inch cubes
  • Place bread cubes into a greased 9” x 13” pan
  • Combine remaining bread pudding ingredients (not sauce ingredients) in a bowl and whisk
  • Pour mixture over the cubed bread and press bread into the liquid
  • Allow to soak for 5-10 minutes
  • Cover with foil and bake at 350F for 45 minutes.
  • Remove foil and bake for an additional 15 minutes.

Sauce

  • Melt butter in a pan
  • Add white sugar, brown sugar, and heavy cream to melted butter and stir to combine
  • Anna usually eyeballs this part to get it right…stir until the sugar dissolves and looks like a caramel sauce
  • Remove from heat, add vanilla bean paste, stir to combine.

Bringing it all together

  • Pour sauce over bread pudding
  • Enjoy!

Notes

This tres leches bread pudding freezes well. This  has been an all-star at eggfests.  It is easy to make, portions easily, and tastes great.

Alex Woda

ALL THE WAY FROM TORONTO, CANADA!

Chef Alex is a master in cooking and BBQing all food groups. He specializes in BBQ pulled pork, brisket, ribs, baked beans chicken wings, jerk chicken and lamb. A frequent cook at Eggfests, he has prepared a number of slow cooked meat dishes and wonderful pizza. Alex will be doing a demo at the Central Florida EggFest preparing a pizza using the Pizza-Porta Big Green Egg attachment. His presentaton will show how to operate your Big Green Egg as a wood-fired pizza oven!

Alex has been an Egg Head for over 20 years. He loves to grill, BBQ and bake all sorts of food on his Egg or whatever heat source available. He has a collection of quality BBQs including a Santa Maria Argentine wood-fired Grill. While he loves to BBQ in the outdoors he lives in Canada. Cold weather BBQ is ok sometime, but the problem is your beer can freeze.  A warm kitchen with a glass of wine and a hot stove is fine too.

Mike Harding will be presenting on the stage during the Egg cool-down at the conclusion of the event. His BGE 101 talk is intended for new Egg owners and those curious about how to start using your Egg safely and effectively!
