As an EggFest Cook, you can prepare anything you’d like to serve! We’ll have the lighting of the Eggs at 8 am on Saturday and you may prepare proteins, sauces etc. ahead of time. EggChefs should be prepared to provide a minimum of 100-150 bite sized samples to our tasters.

Long Cooks: Cooks who want to cook briskets, pork shoulders or other long cooks that can’t be accomplished between the lighting of the Eggs and 11am may choose to start their cooks on their Eggs at home, as long as they adhere to the following guidelines:

  • Items must be finished on a Big Green Egg at Central Florida Fall EggFest.
  • Cooks must follow food safety guidelines and ensure that the protein temperature has not been between 41-135 degrees for more than four hours. The internal temperature must reach between 145 degrees whole or 155 degrees if injected. This information will be printed on the back of your access credential.

You are providing bite sized samples — you are not expected to provide a meal. Of course, more is fine and you are encouraged to show off your Big Green Egg cooking skills!

What to Bring

If you are bringing your own Egg, then please load your Egg in on Friday afternoon. If you are using a Demo Egg, it will be on site Friday. You may bring your own Eggcessories.

Cooks are required to bring all ingredients required for your dishes. This includes all your own food, plus your equipment:

  • Tents (we will provide some at first come first serve)
  • Tablecloths
  • Thermometer
  • BBQ tools
  • Oven mitts
  • Smoking wood
  • Seasonings
  • Nonstick cooking spray
  • Paper plates
  • Foil
  • Paper towels
  • Napkins
  • Toothpicks
  • Plastic utensils
  • Cleaning supplies
  • Food coolers
  • Knives
  • Cutting boards

Cooks’ Meet & Greet

EggFest Cooks are invited to Wekiva Island the night before the event for a private meet and greet. Each registered cook plus one personal guest are welcome!

The meet & greet is an opportunity to hang out with the other cooks, meet our sponsors, and also select your space for EggFest. Cooks will also receive their gift bags that evening. Food will be provided by Without A Paddle Cafe courtesy of Travel Country Outfitters.
